Tips & Tricks:
- 🔪 The sandwiches can be made ahead up to step 4 and refrigerated for up to 4 days, or frozen for up to a month.
- 🥶 Double, triple, quadruple this recipe and make a variety of sandwiches (using different cheeses or meats), wrap tight in tinfoil, label with ingredients and date, and freeze for up to 1 month.
Ingredients:
- 6 eggs
- 1 tbsp milk
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 6 slices bacon, sausage patties, ham, or canadian bacon
- 6 English muffins or 6-12 slices of your favorite bread (depending on how large the slice is, you can just cut 1 slice in half).
- 6 slices cheddar cheese , or your favorite cheese
Directions:
- Oven and Pan Prep
- Preheat the oven to 325 degrees.
- Grease an 8x8’’ (or similar size) high sided pan or oven safe dish with butter or oil spray. Use a larger pan/dish if you're making more sandwiches.
- Eggs
- Whisk the eggs, milk, salt and pepper.
- Pour the egg mixture into the greased pan and bake for 18-22 minutes, or just until the center is set. Meanwhile, cook the bacon.
- Remove from the oven and allow to cool before cutting into 6 squares. Raise the oven to 350 if you'll be enjoying a sandwich right away.
- Bacon
- Cook the bacon on a pan until crisp. Or cook the sausage patties or Canadian bacon. If you're using deli ham, you can skip this step.
- Build Sandwiches
- Top each English muffin half with egg, cheese, meat, and the other half of the muffin.
- Serve
- If you're enjoying a sandwich right away, heat the sandwich at 350 degrees for about 5 minutes or until the cheese melts.
- Wrap any you're making ahead in tinfoil (especially if freezing), plastic wrap, or place into a tight fitting sandwich bag so the sandwich stays together. Store in the refrigerator.
Reheat Options
- If frozen, thaw in the fridge overnight. Remove tinfoil and wrap sandwich in a paper towel. Microwave for 40 seconds - 1 minute. Flip the sandwich over and microwave for 10-30 seconds, until warmed through.
- You can also reheat the sandwiches in the oven or toaster oven at 350 degrees for about 10-15 minutes.
