Tips & Tricks:
- 🔪 Skip steps with knife if you completed Prep Day! This entire dish can be made ahead!
- 🥚 Make extra boiled eggs for snacks. Would be great as a pre-workout snack topped with everything but the bagel seasoning!
- 🍳 Instead of a boiled egg, the hash is also great with a fried egg on top! Whip it up while the leftovers heat-up.
Ingredients:
- 4 eggs, soft boiled
- 4 oz ground lamb/turkey/beef/or other ground meat
- 1 large sweet potato, 1-2 inch cubes
- 5 cups kale
- 6 oz baby bell mushrooms,
- 1/2 sweet onion
- Olive oil for sautéing
- Your favorite spices, i.e. garlic powder, cayenne, onion powder, oregano, etc.
- Salt and pepper, to taste
Directions:
- 🔪 Veg
- Kale - remove stems and slice leaves
- Mushrooms - stems removed and sliced
- Onion - finely chopped
- 🔪 Eggs
- Boil a large half way full pot of water.
- Once simmering, lightly set eggs in the water and set timer for 6 minutes.
- Prepare an ice bath in a large bowl filled with half ice and half cold water.
- Immediately remove the eggs when the timer goes off (don't dump out the boiling water!) and place in the ice bath until eggs are completely cool. About 10 minutes.
- Peel the eggs now, or peel when you're ready to eat.
- 🔪 Potatoes
- Boil sweet potatoes in the still boiling water (from the eggs).
- Boil until potatoes are cooked through, about 15-20 minutes.
- Drain in a colander and rinse with cold water until potatoes are cooled.
- 🔪 Cook
- Add a dash of oil to a warm pan.
- Add ground meat and cook until all of the pink is gone and the meat is lightly browned.
- Remove and set aside meat and remove some oil from the pan if needed.
- Add mushrooms and onion to a bit of the leftover oil in the pan and cook down, stirring occasionally, until mushrooms have released most of their water and the onions are soft, about 5-7 minutes.
- Add kale, cooked meat, potatoes, and spices to the pan and cook, stirring occasionally until kale is wilted, about 3-5 minutes.
- Add salt and pepper to taste.
- Serve
- Serve immediately with eggs on top of hash + your favorite hot sauce.
Reheat Options
- Heat a pan with a dash of oil and add desired amount of hash to the pan. Sauté hash for about 3-5 minutes until warmed through. Serve cooled egg over the hash. Or place cooled/peeled egg in a hot bath of water while you heat up your hash.
- Microwave desired amount of hash + the egg for about 2-3 minutes, stirring hash and flipping egg halfway through. This method will cook the egg to more than a 6 minute (runny center) egg.
