Tips & Tricks:

- 🥩 This recipe uses the same steak as this week's salad. If you're making this week's salad, make all the steak now (1.5 lbs) and set 4 servings of steak aside in the refrigerator until you're ready to make the salads.
Ingredients:
- 1/2 pound flank, skirt, hanger, or flap steak
- 2 tbsp (30ml) vegetable oil
- 4 ears fresh corn or 1 (15 oz) can corn
- salt
- 2 tbsp mexican crema or mayonnaise if DF
- 2 oz cotija cheese or feta
- 4 green onion sprigs
- 1/2 cup cilantro
- 1 jalapeño pepper (optional)
- 1/2 tsp garlic powder
- 1 tbsp lime juice
- Chili powder or hot chili flakes, to taste
Directions:
- 🔪Veg and Cheese Prep (can be done up to 3 days ahead).
- Shuck corn and cut kernels off the cob, or drain and rinse canned corn.
- Finely slice green onions, green and white parts.
- Finely chop cilantro.
- Remove seeds and stems from jalapeño and finely chop.
- Finely chop/crumble the cotija or feta cheese.
- Steak
- Turn oven broiler on high and set the top oven shelf just above the middle level.
- Thinly slice steak against the grain. Check out this article to see how.
- Lay the steak spread out over a sheet pan (lined with tin foil for easy clean-up) so it is evenly laid out across the pan.
- Sprinkle a generous amount of salt and pepper over all of the steak.
- Put the pan under the broiler for another 10 minutes, or until the steak is crispy. While the steak is cooking, start step 3, and periodically check on the steak.
- Saute Corn
- Heat oil in a large nonstick pan over high heat.
- Add corn kernels, toss once or twice to coat the kernels with oil.
- Season to taste with salt.
- Let the corn cook undisturbed until charred on one side, about 2 minutes. Toss/stir corn, and let the corn cook undisturbed until charred on the second side, about 2 minutes longer.
- Transfer the corn to a large bowl.
- Combine Corn Salad
- Add crema (or mayonnaise), cheese, green onion, cilantro, jalapeño, garlic powder, lime juice, and chili powder to the bowl with the corn and toss to combine.
- Taste and adjust seasoning with salt and more chili powder to taste.
- Serve
- Serve corn salad with steak.
