Ingredients:
- 1 lb chicken thighs
- 1/2 lb frozen shrimp
- 1 large yellow onion, sliced thin
- 2 red and yellow bell peppers, sliced thin
- 1 1 oz taco powder package
- vegetable oil
Serve with:
- 4 corn or flour tortillas
- 1 avocado or guacamole
- pico de gallo
- 2 oz shredded cheese
- 1 lime
- 1 small bunch of cilantro
Directions:
- 🔪Veg, Chicken, and Shrimp Prep (all of this can be done up to 3 days before cooking).
- Thinly slice onion.
- Thinly slice bell peppers.
- Slice chicken thighs into strips.
- Thaw shrimp over night.
- Optional, remove tails from the shrimp once thawed.
- Prep for Roasting
- Preheat oven to broil and place the oven rack to the middle level.
- Prepare a large sheet pan with tinfoil and a good spray of non-stick cooking spray or rub with oil.
- In a large bowl, combine onion, bell pepper, olive oil, taco powder just to cover, and salt if your taco powder does not have salt in it.
- In another large bowl combine the chicken strips with oil and taco powder just to cover, and salt if your taco powder does not have salt in it.
- Roast
- Spread seasoned veggies over the pan and broil for about 5-8 minutes or until veggies are soft and a bit browned.
- Place shrimp in the now empty veggie bowl and combine with oil and taco powder just to cover, and salt if your taco powder does not have salt in it.
- Remove the sheet pan from the oven and evenly lay the seasoned chicken and shrimp over the veggies.
- Place the sheet pan back under the broiler and roast for another 5-8 minutes or until chicken and shrimp are cooked through.
- Serve
- Squeeze juice from a fresh lime over fajita mixture and top with fresh cilantro.
- Serve in warmed tortillas topped with avocado or guacamole, cheese, and pico de gallo.
Reheat Options
- Enjoy cold, heat up in the microwave for about 2 minutes, or spread over a sheet pan and heat up in 350 degree oven for about 10-15 minutes.

Enjoy over a salad, as a burrito, serve over rice and beans, or add a fried egg over the fajitas and have a fiesta breakfast!
