    Avocado Vinaigrette

    Tips & Tricks:

    • 🔪 Skip steps with knife if you completed the prep ideas! This dressing can be made up to 5 days ahead. It may become darker green, but the vinegar should help it not turn brown.

    Ingredients:

    • 1 ripe avocado
    • 1/4 cup white wine vinegar
    • 4 tsp dijon mustard
    • 4 tsp extra virgin olive oil
    • Salt and pepper, to taste

    Directions:

    1. In a food processor or blender, combine avocado, vinegar, mustard, salt and pepper.
    2. Run processor until very smooth and creamy.
    3. With processor running on low, stream in olive oil until just combined.
    4. Taste and season with salt and pepper.
