Bacon and Egg Breakfast Salad

Tips & Tricks:

  • 🔪 This entire dish can be made up to 3 days ahead, but it’s best to have at least 1 serving fresh.
  • 🥚 Make extra boiled eggs for snacks. Would be great as a pre/post workout snack topped with everything but the bagel seasoning!
  • 🥚 For an easier peel, set cold uncooked eggs in a bowl of luke warm water while the pot of water comes to a boil. I made a quick video to help.

Ingredients:

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1/2 teaspoon zest and 1 1/2 teaspoons fresh juice from 1 lemon
  • 1/4 cup finely sliced green onions, (about 2 stalks)
  • 1 tablespoon minced fresh parsley leaves or dill
  • salt and pepper to taste
  • 6 slices of bacon
  • 4 slices of your favorite bread, toasted

Option:

  • 1 large bunch of spinach

Directions:

  1. 🔪 Veg Prep (can be done up to 3 days ahead)
    1. Finely slice green onions, white and green parts.
  2. 🔪 Eggs (can be done up to 3 days ahead)
    1. Boil a large half way full pot of water.
    2. Once simmering, lightly set eggs in the water and set timer for 11 minutes.
    3. While the eggs boil, prepare an ice bath in a large bowl filled with half ice and half cold water.
    4. Immediately remove the eggs when the timer goes off and place in the ice bath until eggs are completely cool. About 10 minutes.
    5. Peel the eggs and roughly chop.
  3. 🔪 Bacon (can be done up to 3 days ahead)
    1. Slice bacon into bite size pieces.
    2. Cook in a pan over medium-high heat until crisp.
    3. Scoop cooked bacon onto a paper towel to soak up grease.
    4. Let cool and store in a separate (new paper towel lined) container from the egg salad so it stays crispier.
  4. Breakfast Salad Time
    1. Combine eggs, mayonnaise, lemon juice and zest, green onions, and parsley or dill in a medium bowl.
    2. Break-up the eggs by smashing and mixing everything together with a firm whisk or fork.
    3. Taste and add salt and pepper to your liking.
  5. Serve
    1. Serve egg salad on your favorite toasted bread with a good sprinkle of bacon. Press the bacon in lightly with your hand, a fork, or the whisk so it doesn't roll off as you enjoy your bacon and egg breakfast salad toast.
    2. Add some extra greens to your breakfast by adding a layer of fresh spinach leaves between the toast and egg salad.
