Tips & Tricks:
- 🔪 Skip steps with knife if you completed Prep Day!
- 🍤 Thaw shrimp overnight if buying frozen.
- 🍤 Optionally devein and/or remove tails from the shrimp.
- 🍤 Make extra shrimp (1 lb total) to easily toss cold with the lentil salad.
- 🌶 Use any spices you already have on hand for the shrimp, or a pre-mixed spice blend you love.
Ingredients:
Shrimp
- 1/2 tbsp chili powder
- 1/2 tbsp paprika
- 1/2 tsp cumin
- 1/2 tsp oregano dried
- 1/2 tsp garlic powder
- 1 tsp brown sugar or white sugar
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 lb shrimp uncooked, peeled
- 1 tbsp olive oil
Orzo
- 1 tsp of garlic powder (or use 5 cloves of finely chopped roasted garlic)
- 1 Lemon, juiced
- 2/3 cups orzo
- 1-2 tbsp olive oil
- 4 oz crumbled feta
- 1 small head of broccoli, cut into florets
Directions:
- 🔪 Cook Orzo (can be made up to 3 days ahead)
- Cook orzo per the package instructions.
- Serve immediately, or make up to 3 days ahead. Drizzle a bit of olive oil over the orzo and let it cool at room temp for about an hour and cover and refrigerate.

- 🔪 Veg Prep (can be made up to 3 days ahead)
- Cut broccoli into florets or bit size pieces.
- Marinate Shrimp
- Combine the chili powder, paprika, cumin, oregano, garlic powder, brown sugar, salt, and pepper in a bowl.
- Pour the mixture over the shrimp and mix well. Set aside to marinate for 30 minutes.
- Steam Veg
- Steam the broccoli using any of these easy methods.
- Cook Shrimp
- Heat the olive oil in a skillet over medium-high. Arrange the shrimp in a single layer and cook for 2-3 minutes without moving.
- Flip and cook for another 2-3 minutes without moving.
- Once both sides are blackened and the shrimp is fully pink, immediately remove from the heat and serve.
- Mix Orzo
- Mix warmed orzo with 1/2 freshly squeezed lemon, oil, garlic, feta, salt, and pepper. All to taste, so start small and keep adding until just right.
- Serve
- Serve shrimp and broccoli over orzo and garnish with a lemon wedge and a sprinkle of salt over the broccoli if desired.
Reheat Tips:
- Orzo: When you're ready to eat it, warm it up with a splash of water in a microwave safe bowl covered with a damp paper towel for about 2 minutes, stirring halfway through.
