Blackened Shrimp over Lemon-Garlic-Feta Orzo and Broccoli

Tips & Tricks:

  • 🔪 Skip steps with knife if you completed Prep Day!
  • 🍤 Thaw shrimp overnight if buying frozen.
  • 🍤 Optionally devein and/or remove tails from the shrimp.
  • 🍤 Make extra shrimp (1 lb total) to easily toss cold with the lentil salad.
  • 🌶  Use any spices you already have on hand for the shrimp, or a pre-mixed spice blend you love.

Ingredients:

Shrimp

  • 1/2 tbsp chili powder
  • 1/2 tbsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp oregano dried
  • 1/2 tsp garlic powder
  • 1 tsp brown sugar or white sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 lb shrimp uncooked, peeled
  • 1 tbsp olive oil

Orzo

  • 1 tsp of garlic powder (or use 5 cloves of finely chopped roasted garlic)
  • 1 Lemon, juiced
  • 2/3 cups orzo
  • 1-2 tbsp olive oil
  • 4 oz crumbled feta
  • 1 small head of broccoli, cut into florets

Directions:

  1. 🔪 Cook Orzo (can be made up to 3 days ahead)
    1. Cook orzo per the package instructions.
    2. Serve immediately, or make up to 3 days ahead. Drizzle a bit of olive oil over the orzo and let it cool at room temp for about an hour and cover and refrigerate.
    3. See reheat tips below.
  2. 🔪 Veg Prep (can be made up to 3 days ahead)
    1. Cut broccoli into florets or bit size pieces.
  3. Marinate Shrimp
    1. Combine the chili powder, paprika, cumin, oregano, garlic powder, brown sugar, salt, and pepper in a bowl.
    2. Pour the mixture over the shrimp and mix well. Set aside to marinate for 30 minutes.
  4. Steam Veg
    1. Steam the broccoli using any of these easy methods.
  5. Cook Shrimp
    1. Heat the olive oil in a skillet over medium-high. Arrange the shrimp in a single layer and cook for 2-3 minutes without moving.
    2. Flip and cook for another 2-3 minutes without moving.
    3. Once both sides are blackened and the shrimp is fully pink, immediately remove from the heat and serve.
  6. Mix Orzo
    1. Mix warmed orzo with 1/2 freshly squeezed lemon, oil, garlic, feta, salt, and pepper. All to taste, so start small and keep adding until just right.
  7. Serve
    1. Serve shrimp and broccoli over orzo and garnish with a lemon wedge and a sprinkle of salt over the broccoli if desired.

Reheat Tips:

  1. Orzo: When you're ready to eat it, warm it up with a splash of water in a microwave safe bowl covered with a damp paper towel for about 2 minutes, stirring halfway through.
