Tips & Tricks:
- 🔪 Skip steps with knife if you completed Prep Day! This entire dish can be made ahead!
- 🥚 If you’re making soft boiled eggs, make extra boiled eggs for snacks. Would be great as a pre-workout snack topped with everything but the bagel seasoning!
- 🍳 Instead of a boiled egg, the hash is also great with a fried egg on top! Whip it up while the leftovers heat-up.
- 🥬 Can’t find swiss chard? Use spinach, kale, or shaved brussel sprouts.
Ingredients:
- 8 eggs, soft boiled or made your way
- 12 oz breakfast sausage
- 12 oz small yellow potatoes or 2 sweet potatoes, 1/2 inch cubes
- 4 cups swiss chard (about 1 bunch), stems removed and leaves sliced
- 1 sweet onion, thinly sliced
- Olive oil for sautéing
- Your favorite spices or hot sauce, i.e. garlic powder, cayenne, onion powder, oregano, etc.
- Salt and pepper, to taste
Directions:
- 🔪 Veg Prep
- Chard - remove stems and slice leaves
- Onion - thinly sliced
- 🔪 Eggs - if making soft boiled eggs
- Boil a large half way full pot of water.
- Once simmering, lightly set eggs in the water and set timer for 6 minutes.
- Prepare an ice bath in a large bowl filled with half ice and half cold water.
- Immediately remove the eggs when the timer goes off (don't dump out the boiling water!) and place in the ice bath until eggs are completely cool. About 10 minutes.
- Peel the eggs now, or peel when you're ready to eat.
- 🔪 Potatoes
- Chop potatoes into small 1/2 inch cubes and place in a medium pot half filled with water. Set over medium-high heat.
- Boil until potatoes are cooked through, about 10-15 minutes.
- Drain in a colander and set aside until ready to throw into the hash.
- 🔪 Breakfast Sausage
- While the potatoes are boiling, cook the breakfast sausage according so package instructions in a large non-stick pan or dutch oven. Or place links, grounds meat, or patties in a hot pan with a dash of oil and cook through. Flipping occasionally and breaking up the ground meat or patties. If cooking links, it’s easier to cut into bite size pieces once they are fully cooked.
- Set aside sausage until ready to add to the hash.
- 🔪 Cook
- Add a dash of oil to the large warm pan if needed.
- Add onion and cook until onions are soft, about 5-7 minutes.
- Add sausage, potatoes, chard, and spices (or hot sauce) to taste to the pan and cook, stirring occasionally until chard is wilted, about 3-5 minutes.
- Add salt and pepper to taste.
- Serve
- Serve immediately with eggs your way (or soft boiled eggs if you made those) on top of hash + your favorite hot sauce.
Reheat Options
- Heat a pan with a dash of oil and add desired amount of hash to the pan. Sauté hash for about 3-5 minutes until warmed through. Serve with eggs your way or cooled soft boiled egg over the hash. Or place cooled/peeled egg in a hot bath of water while you heat up your hash.
- Microwave desired amount of hash (on it’s own or) + a soft boiled egg for about 2-3 minutes, stirring hash and flipping egg halfway through. This method will cook the egg to more than a 6 minute (runny center) egg.
