Eggs Over Potato, Beef, and Veggie Hash

Tips & Tricks:

  • 🔪 Skip steps with knife if you completed Prep Day! This entire dish can be made ahead!
  • 🥚 Make extra boiled eggs for snacks. Would be great as a pre-workout snack topped with everything but the bagel seasoning!
  • 🍳 Instead of a boiled egg, the hash is also great with a fried egg on top! Whip it up while the leftovers heat-up.

Ingredients:

  • 8 eggs
  • 8 oz of beef from dinner 1
  • 12 oz small yellow potatoes or 2 sweet potatoes, 1/2 inch cubes
  • 4 cups kale (about 1 bunch), stems removed and leaves sliced
  • 8 oz baby bell or cremini mushrooms, cleaned and slices
  • 1/2 sweet or yellow onion
  • Olive oil for sautéing
  • Your favorite spices, i.e. garlic powder, cayenne, onion powder, oregano, etc.
  • Salt and pepper, to taste

Directions:

  1. 🔪 Veg Prep
    1. Kale - remove stems and slice leaves
    2. Mushrooms - stems removed, wipe off any dirt, and slice
    3. Onion - finely chopped
  2. 🔪 Soft Boiled Eggs - skip this step if you’re making eggs your way
    1. Boil a large half way full pot of water.
    2. Once simmering, lightly set eggs in the water and set timer for 6 minutes.
    3. Prepare an ice bath in a large bowl filled with half ice and half cold water.
    4. Immediately remove the eggs when the timer goes off (don't dump out the boiling water!) and place in the ice bath until eggs are completely cool. About 10 minutes.
    5. Peel the eggs now, or peel when you're ready to eat.
  3. 🔪 Potatoes
    1. Chop potatoes into 1/2 inch (bite size cubes) just before boiling so they don’t turn brown.
    2. Boil potatoes in the still boiling water (from the eggs) or start a boiling pot of water.
    3. Boil until potatoes are cooked through, about 15-20 minutes.
    4. Drain in a colander and rinse with cold water until potatoes are cooled.
  4. 🔪 Cook
    1. Add a dash of oil to a warm pan.
    2. Add mushrooms and onion to the pan and cook down, stirring occasionally,  until mushrooms have released most of their water and the onions are soft, about 5-7 minutes.
    3. Add kale, beef, potatoes, and spices to the pan and cook, stirring occasionally until kale is wilted, about 3-5 minutes.
    4. Add salt and pepper to taste.
  5. Serve
    1. Serve immediately with 2 eggs on top of hash + your favorite hot sauce.
    2. If making eggs your way, cook them and serve over hash.

Reheat Options

  1. Heat a pan with a dash of oil and add desired amount of hash to the pan. Sauté hash for about 3-5 minutes until warmed through. Serve cooled soft boiled eggs over the hash. Or place cooled/peeled egg in a hot bath of water while you heat up your hash.
  2. Or microwave desired amount of hash + the egg for about 2-3 minutes, stirring hash and flipping egg halfway through. This method will cook the egg to more than a 6 minute (runny center) egg.
