Turkey Taco Salad

Tips & Tricks:

  • 🥄 Dressing ingredients are not included in the shopping list! Be sure to add them if you choose to make a dressing rather than buying pre-made.
  • 🥗 All salad ingredients are optional! Switch things up, add more of your favorite toppings, or ax any of these toppings you don’t like.

Ingredients:

  • 1 lb Ground Turkey
  • 1 (1 oz) taco seasoning packet
  • 1 tsp Avocado oil (or any oil of choice)
  • 1 large head of romaine lettuce (or 2-3 small)
  • 1 pint cherry tomatoes
  • 1 (15 oz) can black beans
  • 3/4 cup cheddar cheese (shredded)
  • 3 green onion sprigs

Optional - Serve with

  • 1 cup pico de gallo
  • 1 cup Tortilla Strips
  • 2 avocados

[Chipotle Lime Dressing]

Directions:

  1. 🔪 Veg Prep
    1. Chop lettuce.
    2. Halve tomatoes.
    3. Thinly slice green onions.
    4. Drain and rinse black beans.
    5. Shred cheese if you purchased a block.
  2. 🔪 Turkey
    1. Warm a non-stick pan over medium-high heat with 1 tsp of oil.
    2. Add ground turkey and taco seasoning packet to the pan and break up the meat into bite size chunks. I prefer bigger chunks that are easier to pick-up with a fork, but do you!
    3. Let each side cook undisturbed for 2 minutes, flipping and stirring to make sure to cook all sides.
    4. Cook until all of the pink is gone, about 7 minutes.
    5. Set aside and let cool.
  3. 🔪 Serve
    1. Place chopped lettuce in meal prep containers if making ahead.
    2. Top with the veg and cheese from step 1, pico de gallo (if using), and cooked turkey (make sure the turkey is cooled completely if you’re making salads ahead of time).
    3. Just before eating, toss with your favorite dressing or optional [Chipotle Lime Dressing], and top with chopped avocado and tortilla strips (if using).
