Balsamic Glazed Steak and Mushrooms over Rice

Tips & Tricks:

  • 🔪 Skip steps with knife if you completed the prep ideas!
  • 🥩 Make extra steak (2 lbs total) to easily toss cold with the kale salads. Be sure to up the marinade recipe by half! See the salad recipe if you don’t want to do the math (🙋‍♀️).

Ingredients:

  • 1 pound flank, skirt, hanger, or flap steak
  • 16 oz cremini, button, or baby bell mushrooms
  • 1/2 cup jasmine, basmati, or sushi rice

Optional Garnish

  • fresh parsley or cilantro

Marinade

  • 1/2 cup tamari (for GF) or soy sauce
  • 4 tbsp vegetable oil
  • 4 tbsp balsamic vinegar
  • 2 tbsp granulated sugar or honey
  • 4 cloves garlic or 1 1/2 tsp of ground garlic
  • 2 tbsp Dijon mustard
  • 1/2 tsp freshly ground black pepper

Directions:

  1. 🔪Veg and Marinade Prep (can be done up to 3 days ahead).
    1. Mix together all marinade ingredients.
    2. Cut mushrooms into bite size pieces, in halves or quarters depending on how big they are.
    3. Chop parsley.
  2. 🔪 Cook Rice (Can be done up to 3 days ahead)
    1. Cook rice according to package instructions.
    2. If not serving right away, let it cool and store in the refrigerator.
    3. Reheat by fluffing up with a fork in a microwave safe bowl, cover with a damp paper towel, and microwave for 2-3 minutes, fluffing more halfway through.
  3. 🔪 Prep Steak (can be done earlier the day you plan to have this dinner)
    1. Thinly slice steak against the grain and set aside. Check out this article to see how.
    2. Mix sliced steak into half of the marinade and let it marinate for at least 30 minutes.
  4. Marinate Mushrooms
    1. Turn oven broiler on high and set the top oven shelf just above the middle level.
    2. Mix cut mushrooms into the rest of the marinade.
    3. No need to marinate for long. Spread mushrooms onto a tin foil lined (for easier cleaning) sheet pan.
  5. Time to Broil
    1. Put mushrooms under the broiler for 5 minutes.
    2. Lay the steak in with the mushrooms and spread out over the pan so everything is mostly evenly laid out across the pan.
    3. Put the pan back under the broiler for another 10-15 minutes, or until the steak and mushrooms are looking crispy.
  6. Serve
    1. Serve steak and mushrooms over warm rice, optionally spooning any liquid in the pan over the rice.
    2. Top with a sprinkle of chopped parsley or cilantro.
    3. If you made the additional steak, set aside and refrigerate to be used in the kale salads.
