Tips & Tricks:

Ingredients:
- 1 (2-3 pound) boneless chuck roast
- fine sea salt and freshly-cracked black pepper
- 1 tablespoon avocado oil or olive oil
Taco Bar
- 8 corn or flour tortillas
- 1/2 red onion, chopped
- 1 bunch cilantro, chopped
- cotija cheese, queso fresco, or other favorite cheese
- 1 avocado, sliced
- 1 10-15oz can of your favorite enchilada sauce
- or make your own sauce with the ingredients below
Chipotle Sauce (makes about 4 cups)
- 8 roma Tomatos
- 2 jalapeños
- 1 small red onion
- 1 small bunch cilantro
- 6 cloves garlic
- 1 lime, juiced
- salt, to taste
- 1-2 pepper from a 7oz can of chipotle peppers in adobo sauce
Directions:
- 🔪 Chipotle Sauce
- Prep Veg
- Remove tomato core
- half, remove stem, and optionally remove seeds from jalapeños.
- Remove stem and 1/4 onion
- Set oven to broil (wait 5 minutes) and roast tomatoes, jalapeños, onion, and garlic.
- Flip and remove vegetables from the broiler as they evenly darken. Garlic should only take about 5 minutes. Jalapeños and onion, 10-15 minutes. Tomatoes, about 15-20 minutes.
- Add all sauce ingredients (only 1 jalapeño) to a blender and blend until smooth.
- Taste sauce and add salt and more jalapeño until you’re happy with it.
- 🔪 Prepare meat
- Cut beef into 2 inch cubes, trimming off excess fat. Can be done up to 3 days ahead.
- 🔪 Season and Sear Beef
- Season beef chunks on all sides with a generous amount of salt and pepper.
- Click the “Sauté” setting on the Instant Pot. Add the oil, followed by half of the beef, and sear — turning every 45-60 seconds or so — until the beef is browned on all sides. Transfer beef to a separate clean plate, and repeat with the remaining beef, searing until it has browned on all sides. Set this batch aside too.
- Press “Cancel” to turn off the heat.
- 🔪 Pressure Cook Beef
- Pour in the enchilada sauce or 1.5 cups of the chipotle sauce, and scrape the bottom of the pot to get all the goodies on the bottom mixed into the sauce.
- Add the beef back to the pot and toss briefly to combine with the sauce.
- Close lid securely and set vent to “Sealing”.
- Cook on high pressure for 30 minutes, followed by a full natural release (about 15 minutes).
- 🔪 Shred Meat
- Set oven broiler to high heat and place shelf to the middle level (if you’re enjoying right away).
- Remove the lid of the Instant Pot once pressure is fully released.
- Shred beef with 2 forks in separate bowl with 1/2 cup of sauce from the pot. Or in your stand mixer (including juices) using the paddle (example).
- At this point, you can let the beef cool and refrigerate for up to 5 days, or freeze for up to 3 months.
- Crisp Meat
- Transfer beef to a large baking sheet. Spoon about a 1/4 cup+ of the sauce from the pot evenly on top of the beef.
- Broil for 4-5 minutes, or until the edges of the beef begin browning and crisping up.
- Remove the baking sheet from the oven, then optionally pour 1/4 cup+ of the remaining sauce from the Instant Pot evenly over the beef and toss to combine.
- Serve
- Warm corn tortillas wrapped in a damp clean kitchen towel or tortilla warmer in the microwave for 30 seconds - 1 minute.
- Serve on corn tortillas topped with chopped red onion, chopped cilantro, cheese, a slice of avocado, and your favorite hot sauce or salsa.
Reheat Options
- Start at step 6 to reheat, except mix in any gelatinized juices to melt into meat as it heats.
- Serve warm in tacos, burritos, salads, or whatever sounds good to you!
