Ingredients:
- 2 Tablespoons oil , divided
- 12 ounces andouille sausages
- 1/2 lb boneless skinless chicken breasts (about 1 breast)
- 1 yellow onion
- 1 green bell pepper
- 3 green onions
- 3 ribs celery
- 3 cloves garlic
- 2 teaspoons Cajun seasonings (I use Old Bay which is close in flavor and I usually already have it)
- 2 tsp dried basil or other dried herbs
- 1/4 teaspoon dried thyme
- ½ teaspoon granulated sugar
- 1 1/2 cups long grain white rice
- 14.5 ounce can diced tomatoes , with juices
- 1 3/4 cups low-sodium chicken broth
- 1/2 teaspoon kosher salt
Directions:
- 🔪 Veg and Meat Prep (can be done up to 3 days ahead)
- Cut sausage into ¼ in. thick slices.
- Cut chicken breasts into small bite size pieces.
- Small dice onion.
- Small dice bell pepper.
- Thinly slice the green and white parts of green onion.
- Small dice celery.
- Mince garlic.
- Saute
- Turn the pressure cooker to saute the setting.
- Add oil.
- Once hot, add sausage slices, cooking until browned, about 2-3 minutes per side. Transfer to a paper towel–lined plate and set aside. You'll add this back to the pot just before serving.
- Add remaining oil to the pot.
- Add the chicken and cook for one minute, scraping up the browned bits from the sausage.
- Turn the pressure cooker off.
- Add onion, bell pepper, celery, and garlic and cook for one minute.
- Add the Cajun seasoning, dried basil, thyme, sugar and rice and stir to combine.
- Add the diced tomatoes and their juices, chicken broth, and salt.
- Pressure Cook
- Secure the pot lid and turn valve to sealing.
- Cook on High Pressure for 5 minutes.
- When the timer beeps, and then quick release the pressure.
- Carefully open the lid and gently fluff the rice with a fork.
- Add the sausages on top of the rice and return the lid to let the sausage warm for an additional 5 minutes.
- Serve
- Stir lightly, serve, and enjoy!
Reheat Options
- Fluff up everything in a microwave safe bowl.
- Add a splash of water.
- Cover with a damp paper towel.
- Microwave for about 3 minutes, stirring and fluffing more half way through.
