Chicken Cacciatore with Lemon-Parmesan Broccoli

  • 🥦 Don’t want broccoli? Try this dish with asparagus! Just roast for less time since they will cook faster than broccoli.

Ingredients:

  • 4 Skinless/boneless chicken thighs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil, divided
  • 1/2 a small onion
  • 8 oz crimini mushrooms, sliced
  • 4 cloves garlic or 1 tsp of garlic powder
  • 1/2 cup dry white wine (or lemon juice and water)
  • 1 (14.5 oz) can chopped tomatoes
  • 1 yellow or red bell pepper
  • 1/2 tsp dried rosemary
  • 1/4 tsp crushed red pepper flakes
  • 1 bunch of broccoli rabe or broccolini
  • olive oil
  • 1/4 cup parmesan
  • 1 lemon
  • black pepper and salt to taste

Directions:

  1. 🔪 Veg Prep (can be done up to 3 days before)
    1. Slice mushrooms.
    2. Mince garlic.
    3. Slice bell pepper.
    4. Thinly slice onion.
  2. Instant Pot Chicken
    1. Sprinkle chicken with salt and pepper.
    2. Place IP on saute mode. Add 1 tbsp of oil.
    3. Once hot add chicken and cook until browned on both sides, turning once. Repeat with remaining chicken. Set chicken aside.
    4. Add remaining oil to pot, add onions, mushrooms, and salt and pepper. Cook for 4-5 minutes or until tender.
    5. Add garlic and cook for 30 seconds.
    6. Add wine and simmer for 1 minute.
    7. Add tomatoes (with juices), peppers, rosemary, pepper flakes, and chicken to pot. Set on high pressure for 8 minutes. Quick release pressure.
  3. Broccoli
    1. Turn the broiler on and set the rack toward the top.
    2. Trim the broccoli of any rough ends.
    3. Place the broccoli on a sheet pan (lined with tin foil for easy clean-up), drizzle olive oil over the veg and toss with your hands to cover it completely with oil.
    4. Sprinkle with salt, pepper, and parmesan.
    5. Roast under the broiler until cheese is melty and veg is softened, about 5-7 minutes.
    6. Stay close! This could go fast. If the cheese starts to brown too much before the broccoli has softened enough, place the sheet pan on a lower level.
    7. Remove from the oven and squeeze lemon over the broccoli before serving.
  4. Serve
    1. Serve chicken cacciatore with lemon-parmesan broccoli.
