Yogurt Chicken Pita Bar

Ingredients:

  • 1-1.5 lb chicken thighs
  • 2 cup plain greek yogurt
  • 8 tablespoons olive oil
  • 2 tsp garlic powder
  • 4 teaspoon dried oregano
  • 2 teaspoon kosher salt
  • 1/2 tsp black pepper
  • 4 Pita
  • 2 bell peppers (red and yellow)

Optional Garnish

  • Kalamata olives
  • Red onion
  • Feta
  • pre-made tzatziki or see my recipe to make it yourself

Directions:

  1. 🔪 Marinate Chicken (can be done up to 1 day in advance)
    1. Slice the chicken thighs into strips.
    2. In a medium-sized bowl, whisk the yogurt, olive oil, oregano, salt, and pepper until combined.
    3. Add the chicken and marinate while you prepare the veg, or overnight if possible.
  2. 🔪 Make optional Tzatziki (can be done up to 3 days ahead)
  3. 🔪 Veg Prep (can be done up to 3 days ahead)
    1. Slice bell pepper into strips.
    2. Slice onion into thin pieces.
  4. Oven Time
    1. Pre-heat oven to high broil, with the shelf one step above the center level.
    2. Line a large sheet pan with tin foil (maybe two pans depending on how big your pans are) and spray or brush with oil to help with any sticking.
    3. Evenly lay bell pepper strips over one side of the pan, drizzle with oil, and sprinkle with salt and pepper.
    4. Evenly lay the marinated chicken on the other side of the pan, leaving some space in between so it can cook evenly.
    5. Place under the broiler until the internal temperature of the chicken has reached 165 degrees. About 10-15 minutes.
  5. Serve
    1. I like to serve everything laid out on a large platter for people to serve themselves from. Just make sure you don't forget anything: chicken, bell peppers, tzatziki, pita, olives, onion, feta, and slice up any extra cucumber you have if you made the tzatziki.

Reheat Options

  1. Reheat chicken in the microwave covered with a damp paper towel for 1-2 minutes.
  2. Or set under the broiler for about 5 minutes.
  3. Stir tzatziki well before serving.

🚨Leftover Alert

  1. Any leftover ingredients would be great served over rice, in a wrap, as a salad, or leftover chicken would be great to add to the Tikka Masala!
