Ingredients:

  • 1 pounds ground lamb, beef, chicken, or pork
  • 1/2 red onion, grated
  • 1 egg
  • ¼ teaspoon ground allspice
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander seed
  • ½ teaspoon paprika
  • Dash cinnamon
  • Coarse salt and freshly ground pepper
  • 4 tablespoons chopped fresh cilantro or parsley
  • 4-6 oz crumbled feta
  • 2 bell peppers

Optional Garnish

  • Pre-made Tzatziki or DIY
  • Sliced cucumber
  • 4 Pita
  • Kalamata olives
  • Red onion
  • Feta

[DIY Tzatziki]

Directions:

  1. 🔪 Meatballs (can be formed up to 1 day ahead).
    1. Put the ground meat in a medium bowl and add all the spices, herbs, grated onion, and egg. Mix thoroughly.
    2. Then add the crumbled feta, and fold it evenly into the meat.
    3. Form the meat into 4 inch balls, or however big you would like them.
    4. If prepping ahead, place meatballs on a sheet tray, cover with plastic wrap, and refrigerate for up to 1 day.
  2. 🔪 Veg Prep (can be done up to 3 days ahead)
    1. Slice bell peppers into strips.
  3. Oven Time
    1. Pre-heat oven to high broil, with the shelf placed at the center level.
    2. Line a large sheet pan with tin foil (maybe two pans depending on how big your pans are) and spray or brush with oil to help with any sticking.
    3. Evenly lay bell pepper strips over one side of the pan, drizzle with oil, sprinkle with salt and pepper, and toss.
    4. Evenly lay the meatballs on the other side of the pan. The meatballs can touch, if needed.
    5. Place under the broiler until the internal temperature of the meatballs has reached 165 degrees. About 10-15 minutes.
      1. Toss the bell pepper and rotate the meatballs halfway through or if they start to char too much on one side.
  4. Serve
    1. I like to serve everything laid out on a large platter for people to serve themselves from. Just make sure you don't forget anything: meatballs, roasted bell peppers, tzatziki, pita, olives, onion, any extra feta, and slice up any extra cucumber you have if you made the tzatziki.

Reheat Options

  1. The meatballs can roasted veggies can be warmed up on a sheetpan under the broiler for 5-10 minutes.
  2. Or on a microwave safe plate for 2-3 minutes.
