Ribs with Parmesan Potatoes and South Carolina Mustard BBQ Sauce

Tips & Tricks:

  • 🥘 Don't have a steam rack or trivet for your pressure cooker? Use metal cookie cutters, a steamer basket, rings from mason jar lids, or balls of aluminum foil!
  • 🍖 If it's warm enough where you are, the ribs are great grilled on a BBQ instead of under the broiler.

Ingredients:

  • 1 Rack of Baby Back Ribs (about 1-2 lbs)
  • Salt
  • Pepper
  • 10 oz of baby dutch yellow potatoes
  • 1 tbsp olive oil
  • 1 cup of grated parmesan
  • 1 tbsp of your favorite dried herb of choice such as thyme, basil, or oregano
  • 1+ cup of your favorite BBQ sauce (or DIY)

[DIY South Carolina Mustard Sauce]

Directions:

  1. Potato Prep
    1. Preheat the oven to 425 degrees.
    2. Cut the baby dutch potatoes in half.
    3. Prepare a small sheet pan with a piece of parchment paper.
    4. Drizzle olive oil over the parchment paper spreading with your fingers or a brush.
    5. Sprinkle an even layer of shredded parmesan over the oil. Just alayer big enough to fit the potatoes evenly on top.
    6. Sprinkle with your dried herb of choice.
    7. Place the potatoes flat side down on the parmesan.
    8. Drizzle the top of the potatoes with oil and sprinkle with salt and pepper.
    9. Set aside until your ribs have 10 minutes left at high pressure in the pressure cooker before starting to roast.
    10. Roast in the oven for about 30 minutes, until the cheese starts to really brown (but not burn) and the potatoes can easily be pierced with a fork.
  2. Pressure Cook the Ribs
    1. Season both sides of the ribs generously with salt and pepper.
    2. Cut the ribs in half or thirds so they fit side by side in the pressure cooker.
    3. Pour 1 cup of water into your pressure cooker.
    4. Place a steam rack or trivet inside.
    5. Place the ribs in the pressure cooker, standing on their sides (bones should be vertical).
    6. Close the lid and vent and set high pressure for 25 minutes. Put the potatoes in the oven when there is 10 minutes left at high pressure.
    7. Let the pot do a 20 minute natural release.
    8. Release the rest of the pressure.
  3. Broil Ribs
    1. Once your potatoes are done, remove them and cover with tinfoil so they stay warm.
    2. Set the oven to broil.
    3. Prepare another sheet pan with tinfoil (for easy cleanup) and place your ribs on it.
    4. Rub BBQ sauce all over your ribs.
    5. Place under the broiler until crisp, about 5-10 minutes.
    6. If you think your potatoes need more warmth, add the covered pan to the oven for the last 2 minutes.
  4. Serve
    1. Peel the potatoes off the sheet pan, including any crispy cheese that doesn't stick to the potatoes.
    2. Serve the potatoes along with the ribs and additional BBQ sauce if desired.
