Tips & Tricks:

- 🐟 Salmon patties need to rest and come together in the refrigerator for at least an hour before cooking. A great lunch time activity, making dinner super quick to get on the table.
Ingredients:
- 3/4 pounds skinless, boneless salmon
- 1 tsp Dijon mustard
- 1 shallot
- 1/4 cup coarse bread crumbs (GF if desired)
- 1/2 tbsp capers, drained
- Salt and black pepper
- 1 tbsp butter or olive oil
- 1 heirloom tomato, sliced
- 1/2 small red onion, sliced rings
- 4 lettuce leaves, such as butter, romaine, or use a handful of spinach
- 2 brioche buns (or other soft buns)
- 1 lemon
- Your favorite aioli spread or DIY
Directions:
- 🔪 Prepare Salmon Patties (should be done at least 1 hour ahead, or up to 6 hours).
- Cut the salmon into large chunks.
- Peel and cut the shallot into chunks.
- Put about a quarter of the chopped salmon into the container of a food processor or blender. Set aside the rest.
- Add the mustard to the container.
- Turn the machine on, and let it run (scraping down the sides when needed) until the mixture becomes pasty.
- Add roughly chopped shallot and the remaining salmon, and PULSE the machine on and off until the fish and shallots are chopped and well combined with the pasty salmon. No salmon pieces should be larger than a 1/4 inch or so; but also be careful not make the mixture too fine.
- Scrape the mixture into a bowl, and by hand, stir in the bread crumbs, capers and about 1/2 tsp salt and a good sprinkle of pepper.
- Shape into patties and place on a plate or platter.
- Cover and refrigerate the patties for at least 1 hour, or up to 6 hours.
- Cook Salmon Patties
- Melt/heat the butter or oil in a large nonstick skillet over medium-high heat.
- Place the patties in the hot pan and cook for 3-4 minutes a side, turning once.
- Check the temperature in the middle of the patty, which should reach 140 degrees. Cook time may vary depending on how thick your patties are.
- Or you can grill them:
- Grill for about 4 minutes each side, before turning over and finishing for just another minute or two.

- Serve
- Serve on a bed of greens or on buns, squeeze lemon over the patty, lay a slice of tomato on the patty, and top with a bun spread with aioli.
